Ultrasound-assisted extraction of active compounds from Beta vulgaris using deep eutectic solvents

The aim of this study is to investigate the application ultrasound in extraction betanin from beets (Beta vulgaris) using Deep eutectic solvents (DES). process was optimized response surface methodology. time variable found be correlated with performance. Three DES (choline chloride: urea (CC:U), choline glycerol (CC:G), and citric acid (CC:Ac)) were studied. concentration extracted CC:U, CC:G, CC:Ac 41.27-67.51, 82.46-104.45, 50.06-111.93 mg/100 g. maximum 111.193 g achieved 38 min 44% water an ultrasonic bath. These results demonstrate that DESs are excellent for superior efficiency conventional solvents. Ultrasound significantly improved beets. However, a higher content extracts did not translate into greater active antioxidant capacity, which may related synergistic effects other compounds present beet extracts.
